One of our most favourite summer recipe from Diamond Deluxe Hotel in Kos from our menu, the one that makes us close our eyes and feel like we are aboard a luxurious yacht, sailing the Aegean, is the following. Lobster & ouzo risoni-risotto with powdered peas


50gr finely chopped spring onions

20gr finely chopped onion

10gr finely chopped fennel

0.20ml Ouzo

200gr risoni pasta

80gr lobster tail fillet

100gr bisque

50gr chicken broth

2 drops lobster essence

100gr green peas

50gr butter

60gr grated Parmesan

Lemon zest

Salt and pepper



For the lobster fillet: we cook the lobster in sous-vide at 70o C / 155F for 8 minutes. Remove the sous-vide pack and put it in an ice bath instantly.

For the pea powder: Blanche the peas, strain them and place them into the dehumidifier for 24 hours. Blend them and pass them through a fine sieve or a mesh.

For the risoni risotto: Prepare the risoni pasta according to the instuctions on its package. Sauté all the vegetables in a pan until tender and add the risoni, followed by the ouzo. Add the chicken stock and the bisque and mix slowly until all the fluids have been absorbed. Then we add the lobster essence, butter and parmesan and mix.

We sear the lobster fillet in a pan with clarified butter and serve on the risotto, with pea powder sprinkles.
